Thanks Orudis!This is an incredible dish, really worth your time.Posted ImageFor marinade:2 lbs white fish (I use catfish)1 2-inch knob of ginger, grated1 tsp salt1 tsp fish sauce1 tsp mam nuoc (shrimp paste, sort of hard to find)1 tsp ground black pepper1 tsp sugar2 tsp turmericFor frying:Generous drizzle of olive oil2 bunches scallions, chopped into 2-inch pieces, white parts sliced in half length-wise2 bunches dill, chopped into 2-inch pieces2 cloves garlic, smashedFor dipping sauce:1 Tbl Nuoc mam2 cloves garlic, minced1 large lime or small lemon, juiced1 chopped chili pepper or 2 tsp chili sauce1 tsp sugarFor serving:Crushed or whole salted and roasted peanutsBun (Vietnamese rice vermicelli noodles)Herb platter of rau ram (Vietnamese coriander), tia to (Vietnamese perilla), etc.Cut fish into 1- by 2-inch pieces. Set aside.In a bowl, mix the marinade then add the fish, let it marinate for 20 minutes or a few hours in the fridge. Stir fry the garlic, add the fish and cook for 5 minutes or so, add the dill and green onions at the end for two minutes or until soft. Set aside.Soak the rice noodles in hot water for 5 minutes then drain. Divide noodles in serving bowls, add some fish, top with peanuts and herbs.Variations: Fish can be grilled or broiled, can use shrimp, can add curry powder to the marinade. I am not a big fan of dill but this dish is insanely good.
