Just a recipe I threw together utilizing what i have in stock. I wanted brew something to get rid of my '06 crop Centennials. I have about a half a pound, I may even swap out some of the Magnum for Cents, or up the late additions, or add some FWH. Looks like a pretty standard AIPA recipe - can't go wrong there :huh:

Looks like a nice IPA to me. Good grain bill as well. Are you calculating AA loss for the hops as well?

Yes, I did a loss calc. on the hops, that's why the AA on the Centennials is so low. I'm brewing this tomorrow, I'll let everyone know how it goes.

Are the hops even still good after that long? How do they smell?If they smell off at all I would just throw them out and buy fresh hops if you're going to spend your time brewing. I had a buddy brew a pale ale with some 2 year old Centennial plugs he had. They were vacuum sealed and frozen, and the beer turned out to be liquid CHEESE. So yeah, make sure the hops are in good shape, and don't waste your time if they aren't.

The hops smelled alright to me. Not as pungent as the new crop, but still smelled fine. FWH'ing with 2oz of Cents and swapping an ounce of Magnum out for 2oz of Cents at the beginning of the boil. That killed all 8oz. that I had left over. We'll see how it comes out.

I was gonna recommend cutting the crystal back to 1.5# but seems I'm too late, should be good though.

Actually, the grain bill ended up being: 18# Maris Otter 2# Munich 1# Crystal II (65-68°L) 1# CaraPils

I checked this morning, there was a nice thick Kräusen. I sniffed the blowoff tube, it smelled wonderfully hoppy. :D

This sucker is fermenting like gangbusters. It's been 4 days since pitch and the gravity has gone from 1.064 to the mid-1.020s (at least from what I could tell with all the gunk and CO2 rising from the sample.) I guess that nice thick pitch of slurry is doing it's job.

It died out at 1.020, my high mash temp caught me on this one. I think my thermometer was in a cold spot in my strike water. After mash-in I was at 155, I stirred it down to 154. In retrospect I should've added some cold water to get down to 151. Oh well...it's beer. I'll drink it. :)

I just transferred this beer to the serving keg after a week of dryhopping (Cascade, 1oz/5gal). It's really not as sweet as I expected it to be with such a high finishing gravity. Very full bodied/malty, but not too sweet. The hop flavor wasn't as high as I would've liked either, but I didn't hit the late additions too hard, so I'm not totally surprised. I'm looking forward to see how this beer is when it's carbed up.
