  • Ingredients:
  • 1 pound dry pinto beans
  • 1 (29 ounce) can reduced sodium chicken, beef, or vegetable broth
  • 1 large onion, chopped
  • 1/2 bell pepper, chopped
  • 2 large, fresh jalapeno peppers, seeded and chopped
  • 2 cloves garlic, minced
  • 1/2 cup green salsa
  • 1 tablespoon cumin powder
  • 2 tablespoons chile powder
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon ground black pepper
  • 1 teaspoon ground cayenne pepper
  • Beer, as needed
  • Salt to taste
Soak and rinse beans per directions on bag- Add beans and liquid to stock pot, begin heat- Add onion and bell peppers- Add additional seasoning and liquid (beer), and bring to a boil- Boil for 20-40 minutes, adjusting liquid and seasonings to taste-Transfer to slow cooker, and cook for 6 to 8 hours on low setting Serve over your favorite bread
