Well, this is not going to be an exact recipe, because on this one I trust you all to know what is what.1 gallon chicken stock1/4 lb butter1/3 lb flour1 large onion, brunoise6 ribs celery, brunoise1 red bell pepper, brunoise3 cups milk1 lb Andouille, small dice1 lb roasted chicken, pulled5 cloves garlic, brunoisekosher salt, black pepper, cajun, and hot sauce to taste1x biscuit mix recipe with 2x butter and 1/2 cup shredded cheddar added to itRender the andouille in the butter. Sweat veg until translucent. Add chicken. Add flour and mix thoroughly. Add milk and stock. Bring to a simmer to thicken and season to taste. Meanwhile make biscuits. To serve, but a biscuit in a large soup bowl and ladle soup upon it.Enjoy. As always, consume with reasonable amounts of beer.

Basic biscuit mix. Make from scratch or Bisquick.
