Actually, it's incredibly tasty...the buttery, apricot-y chanterells blend perfectly with the wee heavy (Skotrat's famous Traquair House clone).

I eat mushrooms , never had any in beer. At first i thought it were wood shavings of some sort.Any good Denny?Ok.

FWIW, the idea came from Randy Mosher's book "The Brewers Companion". Randy calls his version Nirvana...that should tell ya everything. It makes an incredibly delicious beer, at least partially becvasue the underlying wee heavy recipe is so incredibly good.

I have always been enchanted by the idea, especially after seeing Randy's write up on it in Radical Brewing. Did you collect the shrooms or buy them?

I bought them this year. When I've made it in the past I collected them myself but I got too late a start this year. The people I got them from picked them just a couple miles from here.

So they were fresh then and not dried? Man, I am so interested in how this tastes. It really works in my head. Most of the beer I brew, I have an idea in my head about how it will taste in the end, and then I reverse engineer a recipe to suit what I am shooting for, but for this one, I can't even imagine the flavor. I mean, I know Scotch ale, I know chantrelles, I just cant put it together in my mind's pallate!

When I was ready to use them, I thawed them out, chopped them up, and put them in secondary. For you sanitation freaks, there was no washing, no vodka soak, nothing....just a reliance on a 10% ABV beer and a low pH.

Took some to a club meeting yesterday and got 100% positive comments...people loved it! The flavors blend perfectly.

As a beer lover from the west coast who spent extended time working on the east coast, I have been lucky to sample many beers.Smuttynose was a brewery I fell in love with. Anything they offered up, I wanted to try. Their Pale Ale and Brown were exemplary of each style.

Did you keep the shrooms to cook with after you racked?

Nope...considred, but they looked so spent that I didn't even taste them. I think I'll change that the next time I make it.
