I will have a lot of this yeast - the description from White Labs (it is said this is Orval's strain):WLP510 Bastogne Belgian Ale Yeast:A high gravity, Trappist style ale yeast. Produces dry beer with slight acidic finish. More ‘clean’ fermentation character than WLP500 or WLP530. Not as spicy as WLP530 or WLP550. Excellent yeast for high gravity beers, Belgian ales, dubbels and trippels.This is coming off my Stone Cali-Belgique "clone" brew, and before that was used for the base of a lambic (and racked off before bugs were added). I haven't done anything super-high gravity in a while, but it seems this yeast would be good for that. I've done a lot of stuff with Brett recently, so I don't think I want to try an Orval clone or anything with Brett really. I'd love some ideas and pointers to particular recipes that you all may think could work with this. Thanks in advance for any ideas you're willing to share.

See if you can find a clone recipe for Russian River Damnation or something, that would probably be a good fit. ??

I've used this yeast quite a bit, it will work for basically any belgian beer. Even though it is described as a high gravity yeast, I usually use it for low gravity small belgian pale ales since that is what I like to drink. I think I sent JKoravos a bottle of tripel using this yeast, was the big beer of a partigyle. WLP510 is quite a bit cleaner than 500 or 550, perhaps too clean for some. You might try cranking up the fermentation temp to the upper 70s. I have a vial and plan to do that for my next brew. Good luck!
