Year of the Dragon: Dave's Pot Stickershttpss://lh3.googleusercontent.com/-mqoQBDLoyMI/Ty8cUZ-KxeI/AAAAAAAAGyk/tZIMHTlw2T4/s720/DSC000311.jpgHere's the filling; Mix in a bowl:Pound of ground pork or chicken or venison3 tsp soy sauce1 tsp toasted sesame oil1 Tbsp fresh ginger, minced1 shallot, minced4 cloves garlic, minced4 green onions, white part only, diced-------------------------------------------You will also need grape seed Oil--------------------------------------------I use won ton wrappers, but dumpling wrappers work, too. So, place about 30 wrappers on some wax paper and put about a 1/2 tablespoon of the filling in the center of each wrapper. Stay in the center of the wrapper ; if you get it on the edges they won't stick together.Make an egg wash (the 'glue' that holds the wrapper together) with 1 egg and 2 TBL's of water mixed together. Use a basting brush or pastry brush and wet/paint the area around the filling.Fold each wrapper in half. Make one pleat in the center and three on each side. Make sure you squeeze out the air pockets.Over high heat to medium high heat, heat a non stick sauté pan. Add the 2 TBL of grapeseed oil and coat the pan. In batches, add and brown pot stickers and brown them for about 3-4 minutes. You do not need to turn them or even touch them; just let the bottom brown. After 3-4 minutes ....Add about half a cup of water, cover the pan and steam until the water is almost evaporated. It takes about 8-10 minutes; they will be puffy. If the water evaporates before they are done, add a little more.

Dipping Sauce

2-4 teaspoons of sambal¼ cup soy¼ cup rice wine vinegarDash of toasted sesame oil1 Tbsp of green onion tops1 tsp sugar

Made this recipe for dinner used chicken broth to steam the pot stickers.AWESOME! Tender little dumplings of goodness!I give this recipe an +A :frank:
