Poppy Seed Bread Bread: 3 cups and 2 tbs. of sifted flower 1 1/2 tsp. of salt 1 1/2 tsp. of baking power 2 1/2 cups sugar 1 1/4 cups oil 3 eggs 1 1/2 cups milk 1/4 cup of poppy seeds 1 1/2 tsp. vanilla extract 1 1/2 tsp. butter extract 1 1/2 tsp. almond extract 1 cup chopped pecans (optional) Combine all the ingredients in a large bowl and beat with mixer until smooth. Put batter in two greased and flowered loaf pans. (Will make 4-6 mini loaves.) Bake in preheated oven at 325( for 60 - 72 minutes. (Mini loaves 50 - 55 minute.) Bread is done when golden in color and toothpick comes out clean. Cool for 10 minutes then glaze. Glaze: 1/2 tsp. vanilla extract 1/2 tsp. butter extract 1/2 tsp. almond extract 1/4 cup orange juice 3/4 cup of sugar Heat glaze on stove until sugar has dissolved. Spoon over bread. Let sit in pan for 1 hour before removing.
