BBQ Pork and Beans1 large Spanish onion, small dice3 cloves of garlic, fine chop1 lb smoked bacon (I like applewood, but any will do) small dice. If you can find slab bacon, use that, but sliced is fine3 lbs ground pork1 red bell pepper small dice1 green bell pepper (you can sub out a different color or even different peppers all together if you want, but I like to keep them on the sweeter side) small dice2 28 oz cans Bush's Baked Beans Original or whatever you like (if you want to go really hardcore, you can make these too, but these work wonderfully)1 cup balsamic vinegar (the better the better obviously)kosher salt and fresh ground black pepper to tasteany additional seasonings to tasteMethod:In a large thick bottomed pot, crisp the bacon to its ultimate crispiness. Be sure not to crowd it so it is all evenly crispy. Add in onion and garlic and turn down the heat. Sweat the onions until they are translucent. Add in ground pork and some (but don't overdo it) of your seasoning and break the pork up into little pieces as it browns. Once broken up, add your bell peppers and balsamic vinegar and bring to a simmer. At this point, add in your baked beans. This should be fairly loose, so you will want to just simmer the whole thing until it reduces to the consistency you like. Not too thick, not too thin. Be careful when you stir in the beans not to smash them up too much. Check your seasoning and adjust.

I'll attest to teh awesomeness of this dish. Doobahstop supplied this one to a dinner we had a little while ago. Damn tasty stuff. Then again, how could it not be with all that pr0k?I made up a cajun variation last week that went over well. Added a palm full of a cajun spice mix to the above recipe. The mix was:4 parts paprika2 pts kosher salt2 pts ground mustard1 pt black pepper1 pt white pepper1 pt cayenne pepper1 pt ground thyme1 pt dried oregano1 pt cumin

Nope. It may be already in the Bush's. Make the recipe, if you think it needs to be sweeter, by all means.
