0.75 oz Cascade

Yeast:
WLP 007 Dry English Ale
or
Wyeast 1098 British Ale

Process:

mash 150ºF
ferment at 70ºF

Rick, I didn't listen to that podcast yet. Was this recipe given up by the guys at Ballast Pt or was it based on clues? I am guessing they just gave it up. They are pretty cool about giving me their recipes when I go in there to get my supplies. I think many of their recipes are in the binder they keep near the grain bins but they have different names so it's not always obvious which recipes correspond to their own brews. At any rate, this is a great beer so thanks for posting this recipe. I am brewing a Stone Levitation clone that is darn near the actual thing for my next amber, but when that gets close to running out I'll brew this one for sure.

Ballast Point made JZ and Tasty work a bit for the recipe. He didn't give them hop names, but clues on which one. For instance, he said he used a open pollinated hop from Idaho for bittering (Galena). As for the yeast they have a proprietary strain, but it is similar to the WLP002 but finishes drier. But other than that, he was a great guest! I'll have to try this one, I can't get any of their brews in OH.

Thanks Rick, I'll give the podcast a listen. FWIW I would think WLP022 (Essex Ale) may work, but 007 should get close. I use 007 for the Stone Levitation clone...great yeast. I agree the 002 would not be the right call.

I'm gonna give 007 a try with my IPA. If it turns out well, its gonna replace 001 as my house yeast. I wanted an english yeast that could attenuate close to that of 001 and is highly flocculant. 007 looks like the answer.
