Safale S-04 - what's your favorite use of this yeast?

I have a packet in my fridge that I should probably use soon. What's your favorite style for this yeast? I've used it for ESB and I think maybe a stout in the past and it seems to work alright but I wasn't sure if there was a style that this yeast really lended itself to. Just curious what you guys think.

I use this a lot for anything form English bitters to American IPA. I like it best for bitters. Very predictable yeast that finishes fast and cleans up well.

looks like maybe I'll be making another ESB then :P I'm a sucker for the style to be honest.

those are the hops I'm planning on using as well. I'm thinking styrian for the bittering and EKG for the flavor/aroma. eta: what's your recipe ken? I can't view your website at work.

I do not recall ever gettign bubblegum out of that yeast. What did you ferment it at? I assume mid 60's since that must be what your cellar is at these days.

hmm .. interresting. Like I said, I have never noticed it so maybe I let my beers sit long enough for it to clean up or go away.

yeah - it's def young right now and I was only tasting it b/c I was checking the gravity. I'll probably let it hang out in primary for another 1-2 weeks before kegging.

I've had nothing but excellent experiences with this yeast, it is my favorite for IPAs. Never had any off flavors whatsoever.

so you found with age that it resolved itself?

i thought it was that yeasts flavor so i switched so5 beer tasted like old speckled hen -got tired of itIt was easier to get the results i wanted with it.

WAIT A MINUTE, I spoke too soo, I'M SORRY.....I was talking s05, NOT s04. No experience with it.

I've used it for a Brown and a Porter like it. I keep it on hand in my beer fridge just as I do US-05 for backup to liquid yeast that didn't start or for the ability to brew without having to plan too much, ie:make a starter. Beacheta: Bubblegum? I haven't tasted at that point but some of the aromas I get towards about day 4/6 are pretty fruity. I get similar aromas from WP005.
