I hope Cam nor anyone else has a problem with me posting a recipe that is not mine...I found this the other day and wanted to post it, in case I lost it or the greenboard didn't come back.I brewed this a couple of years ago, and it was awesome! Expensive, but awesome.
Somebody asked my to post version 3 of this recipe, so here it goes:OG 1.080 IBUs=81.7 Mash Efficiency=75% Batch Size 6.0 gallonsGrains:16.5# Franco Belges Pilsner MaltMash at 148-149F for one hour and sparge with 170F sparge water.Hops: All sterling hops, mine are whole hops with an adjusted alpha acid to 6.93 (adjusted for time in storage)0.5 oz FWH0.5 oz 60, 55, 50, 45, 40, 35, 30, 25, 20, 15, and 10 minutes.0.75oz at 5 minutes1.75oz at knockout.Yeast:WLP-802.I think this version is the best of the three and I also think I've finally stopped tinkering with the recipe. I usually let this one age a few months in secondary prior to kegging and it produces a beautiful beer with a nice hop kick.

All of Cam's beers are great. My favorite is actually his "Lawnmoer Ale." I've e-mailed him about our new home, but I think he is at sea now.

I just brewed this beer today and it's still one of the most requested beers that I make, if not the most requested beer. I'm glad that it's being enjoyed by many.

This recipe really is awesome. I recommend it to anybody that likes the style and is able to lager. I'd consider this recipe one of the greenboard classics, right up there with JPA, Hophead's Phat Tyre and Denny's RyePA. Cam, let me ask you something. Have you ever brewed it with any hops besides Sterling? To me, Sterling hops kind of define this beer so it's hard to imagine it with anything else. But we can't be all the picky about our hops these days and I was wondering if you have found (or even looked for) any reasonable substitutions.

I did design an imperial pilsner using liberty hops, but I haven't brewed it yet, so I can't really comment on how it would turn out. I don't believe it would be the same as with the sterling, but it would still be pretty darn good. Maybe I will brew that one once I can get the one I just brewed and the dopplebock I brewed a while back lagered and kegged. I also think that saaz would be a great hop to substitute or maybe a blend of saaz and liberty would be really nice. The only draw back to both of those varieties is that they are low alpha, so you would have to adjust the recipe some to account for water absorption with the amount of hops it would take. The liberty version that I have requires 11 ounces of hops!

I think what I'd do in that situation is use Magnum or some other neutral high-alpha variety for the IBUs and then use Saaz, Liberty or whatever for the aroma additions.
