I made some hard apple cider a few months ago and I bottled it today. To me it seems like it would be just like wine but made from apples. Will it keep as long as wine? Will it get better or worse with time? Why?
Some apple cider questions.

It will get better for a few years, level off and then get worse. Will it get better or worse with time?
The cider fairies will improve the taste. They are very small and it takes them a long time to do their job -- years. Once they're done they move on and work on somebody else's cider. After that, your cider will be good for a while and then start to degrade. If you can figure out a way to get the cider fairies to come back, they will restore your cider to its former glory. Good luck with that though. Why?

LOLIt's lower alcohol, so it won't keep as long as wine. But the cider fairies work similar to wine fairies, in that it improves for awhile and then declines. I find it gets really good around 15 months old. Usually mine is gone by about 16 months old, so I can't say how long until it significantly declines.
