Thinking about making a mead for audrey, and aging it til she's 21. I'll prolly drink a gallon or so, but atleast half of the batch would be hers.I found a bee farmr who sells pure raw honey on my way to work. 11 bucks/qt. This a fair price? How many qts would I need? Any questions I should ask him bout the honey?Any good recipes? I think something on the drier side would be good. Don't want to give her some cloying shit for her 21st.

You might want to look at some of the Polish styles to age that long, or make a high OG Sack strength mead. The Polish tend to be on the sweet side. $11/qt ($3.75/lb)Might be a little high. My last honey buy was for around $2.25/lb. For 5 gal you'll need around 5 qts. Find out what, if any varietal honey it might be.And, read the Mead FAQ's, especially Hightest's nutrient additions.

Gonna need a lot more than that. For 5 gallons, he'll need 12 - 18 lbs. depending on how sweet he wants it and what yeast he wants to use.

4 quarts in a gallon, a gallon is about 12lbs, 5 quarts is about 15lbs...you're saying the same thing.Honey price seems highif you can wait till fall when the apples come in a cyser would get my vote. There are some good cyser recipes on the board if you look at the first few pages.you may want to look into corking, capping, and waxing bottles to help prevent oxidation issues with that much age.

You're right. For some reason my brain thought it was about a pound per quart.
