I'm not using any normal grain...I'm trying to malt my own teff and millet and other grains, and then roasting them to different levels of specialty grain, and then mashing or partially mashing them. So right now I'm just trying to find out if I'm actually creating any fermentables or if I'm just steeping flavor out of them (and wasting a whole lot of time and energy).If your just doing a normal sac rest for 1+ hour at temps 148+ I really found that it was a waste of my time.

For never having done all grain before, you are certainly stepping it up by trying to malt your own grains.
