Just opened up a 7 year old bottle of Cruz's Apple Butter Cyser. I'm just amazed at how well this stuff ages. The first several years of this brew is a stiff little drink but man, the flavors mellow and blend so well over time, it's just amazing. Starting to think I'll have to keg my 5 year old batch of this stuff pretty soon... :sarcasm:

Why not bottle some and keg some? That way you'll have bottles to send me at Christmas.

Armagh - the keg was for you but if you only want a bottle, I'll see what I can do. :smilielol: Truth be told, I force-carbed this batch and bottled it years back. I'll do the same with the next batch. Guest - I had a similar problem and just used acid blend to balance out the sweetness a little. Try giving it a little acid blend and a whole lot of time. You'll thank me in about 5 years.

it seems like most folks end up with a high FG on this brew and just accept that fate. with time, it WILL work out. :smilielol: I suppose you could also blend with a dry cyser and that would work.
