You mention DMS here....do you they use Pilsner malt or 2-Row?Reason I ask is that I just kegged a batch of my Black Dog Cream Ale and recipe consists of 2-row, flazed maize, and a touch of honey malt. I'm picking up some light DMS but I didn't think that was possible using 2-Row malt? Am I wrong?if you want to see what DMS smells and tastes like

Pilsner malt usually is 2-row.The DMS flavor you're getting is probably from the corn, which is probably also where it comes from in Genesee. You mention DMS here....do you they use Pilsner malt or 2-Row?Reason I ask is that I just kegged a batch of my Black Dog Cream Ale and recipe consists of 2-row, flazed maize, and a touch of honey malt. Pale-colored malts have more of the DMS precursor SMM. The 2-row is probably pretty light. A good 90+ minute boil should get rid of enough of it.I can taste the difference between DMS (old cooked vegetable) and maize (fresh corn flavor). You mention DMS here....do you they use Pilsner malt or 2-Row?Reason I ask is that I just kegged a batch of my Black Dog Cream Ale and recipe consists of 2-row, flazed maize, and a touch of honey malt. Hey Coastie, the price per can hasn't really changed. Local place advertises $14.99 for a 30 pack.Wow, this thread brings back some of the best memories of growing up in Western PA
. I didn't think they still made Genesse Cream Ale. It was the staple of my friends and I when we were in our early teens. Cheap as hell, but we still knew it was better than Pabst, Strohs or the Beast (Old Milwaukee) and was our go-to beer when we could find someone to go buy it for us (something like $10-12 a case in those days if I remember correctly).
