Well its GO time. Tonight we are tapping our Snowbird Fungus (Belgium Pale Ale). We have a bunch of friends coming over to try it.Later ill post a review.Dan

Lets see, 2 weeks fermenting, 1 week clearing, 2 weeks carbonating in keg. Not very old but we want to give it a shot.Dan

Good Luck and Congrats. Sounds like fun to me. We all know that feeling of anticipation for the first taste. Brewer goes first I say. I hope your friends and you all enjoy your first beer. I just tapped a fresh keg of a newly created beer of mine a Belgian Saison. Pouring it tomorrow night at a public tasting. Hope yours is great!!Mike

Given your credentials, inquiring minds want to know the recipe. As a home brewer who lacks temperature control, Belgians are all I make during the summer. OTOH, given that you're going pro, maybe it's propriety so I'd respect that.

Congrats on the first batch! Unfortunately my first batch was with a Mr. Beer kit and it was terrible. But it did get me started on the hobby. I just now hooked up the CO2 and started carbonating a keg of Liquid Stupid thats been aging for nearly a year now. I'm as giddy as a school girl in anticipation of trying it. Here's hoping your first batch of beer is highly drinkable! :D

As a side note... I am always mildly nervous whenever I put a new keg in the fridge. Yes, I sometimes sample the warm, flat beer but it's not really possible to tell how the beer is going to be unless it's cold and carbed. There are times when I'm elated about how the beer comes out... sometimes not so much. Good luck with the tasting & have fun with it.
