I agree with you Ken, this one has the full lb of crystal malt to balance the body and it has a really nice thing going with the high attenuating clean yeast. I feel like a low attenuating malty english yeast might tip the scales on this one - some people might like it but I don't think I'd do it. There are plenty of good uses for english yeasts without trying an iffy one IMO. One being 1056/us05/wlp001 is a great idea to have the standard. Belgian might be fun, I'll stick by my suggestion to really suss out the differences between the american ale strains available.The possibilities are endless. I agree that one should be 1056/US-05/WLP001 just so you know how the beer comes out. You could go English (1968/1028/1099/1098, etc), but those can be malty and less attenuative so maybe not.

Yeah, I'm calling it an amber ale from now on. I don't know if the color estimator in ProMash is way off, or if I got a bunch of caramelization in the kettle, but it's not really a pale.I came in pretty pale I used C15 and C20 for my version. It was pale. I thought yours looked darker even considering looking through the growler from your gelatin post experiment.

Need to change your metering on your camera, while your sliding door is nice, I would have prefered the beer to be in focus. j/k man, I have the hardest time getting good beer shots like Ken. Somehow he takes awesome beer pr0n.Update - this beer is actually still getting a little bit better - I think I'll hit the plateau soon though. I only tried it once and since I wasn't experienced with it, I didn't asjust the mash temp. It was slightly drier and a little more bland than White Labs 01. I realize WLP001 is a neutral yeast, but US05 had less yeast character to me. The beer came out just fine, but I prefer it with White Labs 01. Cheers.What was the verdict on using US-05 in MLPA? Did you adjust the mash temp at all? Compare it to WLP001
