Question on cider and acid blend, came here by way of a post I saw on "another" forum.I am new to cider, and have a nice 6.7% abv dry cider. Beautiful color, good aroma, taste is not bad, but its a tad bland. I don't want to sweeten it, but I want to enhance the flavor. I was told add acid blend.it is a 3 gallon batch. Folks say add to taste. Well, I'm not sure what I am "tasting" as my measurement and frankly if I add too much to start, then I'm sol.So any helpful advice on this?

First off welcome aboard! When I add acids to taste I pour 4 glasses of a measured amount and add a different measured amount of acid to each one. I pick the one I like the best and scale up the acid for the larger volume. Adding acid will make it more tart. This will make it taste drier than it actually is but will also bring forward other flavor components that might have been more muted. I've found some fruit meads really benefit from an acid addition to make all the flavors a little more crisp.Definitely do some trials to figure out exactly what you like.
