Peachy Pale Ale

My homebrew club's april meeting is the apa meeting. I decided to try my first fruit beer here. Here is the recipe. tell me what you think. 5gal batch when all said and done. 9lbs american 2 row. .5lbs munich.25lbs crystal 40.5oz simcoe 60min.25oz simcoe 30min.25oz simcoe 5min1oz amarillo flameoutRehydrated US-05dryhopped with 1oz of amarillo, and 1oz citra for 1 week.2-3oz of peach extract. I havent decided if I wanna use 2 or 3 yet. I will prolly go with 2 though. I think 3 could be hitting the edge of cloying from what I read. Opinions??

Seems pretty hoppy for a peach flavored ale. What are the IBU's?

I guess i was more trying to just make it more like a regular pale ale with peach added, but hops that would accentuate the peach flavor.

I'd say go for it my Pumpkin Ale is a 6.3% 33 IBU APA, and it works great. If anything though keep it mostly early hop additions, keep the 60 and 30 even increase if you want but drop the late additions allowing the peach it's own place in the beer.

I have not, but from what i have read/have been told its very tropical fruity. all kinds of different fruits in the aroma flavor. best used as a late addition hope though. hear if its used as a bittering or too early on the flavor area that it can be funky.

You'll have to let us know how it comes out. These fruit extracts are hit & miss and some are better than others. I also try to keep hop additions early (typically just a 60) when I add any kind of flavoring (fruit, spice, etc.) so that the flavor can come through. With the hops you have in there, it may be tricky to detect the 3 oz of fruit flavor but you never know. It may end up having just the right balance and level of flavor.

You know what I would do, drop that citra into the boil, and throw some Simcoe in the dry hop.I've found that Citra in the dry hop almost seems to boost the IBUs. I made a clone of stone's Levetation and did 5 gals with amarillo and 5 gals with citra and the Citra just seemed more bitter.Also, I make a dynamite Rye and the hop combo is Amarillo, Simcoe, and Cents(or cascade). Ken can even attest to the tropical fruityness of it and even some people were saying peach, mango, and papaya. My Cuban FIL was like "Guava beer!!"Anyway, I would keep that combo of hops, but I would try putting that really citrussy citra into the boil (maybe with a 1/4 oz in the dry hop) and I would try adding some Simcoe to the dry hop (kind of like a 2:1 Simcoe:other hops).These are just my opinions, of course. :lol:

I'm just concerned that a hop profile would blow away any usefulness the peach would bring to the party. It's such a mild fruit to begin with. Personally, I like the looks of the recipe WITHOUT the peach.

I was kinda thinking that.. so i decided to brew it w/o any peach... then when its all done and carbonated serve it out the keg, and put a few drops of peach in and try it from there.

That sounds good too. I think you'll be surprised by just how much fruit you are going to get out of that hop combo.
