Here is a partial recipe from BYO 4 22 oz bottles 88oz in total X 9 to get 23 L What I want to do is make a 4-5% ABV Ale based on this recipe so would I simply multiply by 9 or do you think that may be a bit to much as far as the Vanilla bean and all the other spices. and also could I use say 2 row to create a base sugar wort and cut back slightly on the brown sugar and maybe use Caramel Malts maybe 1 Lbs C60 maybe 6 lbs base grain 2 Lbs Flaked Barley or some wheat malt for a thick and creamy head and use Sorbate once fermentation has finished and back sweeten with liquified brown sugar to get that sweetness like root beer * 1 vanilla bean* 1 (5-inch) licorice root, broken into pieces* 3/4 cup chopped dried sarsaparilla root* 2 tablespoons dried sassafras root bark* 1 tablespoon chopped dried burdock root* 1 (3-inch) cinnamon stick* 3 heads star anise* 3 quarts distilled water (12 cups)* 2 cups lightly packed dark brown sugar* 1 tablespoon molasses* 2 (1/8-inch-wide) strips of orange zestUS-05

Root Beer Beer.I don't know what to tell you. I think it will be an iterative process.I haven't brewed many spiced beers, the last one I did brew was long enough ago where I essentially have no memory of it, but if I were you I would brew the base beer with just 2-row and maybe some light crystal, no or very little hops (10 IBU?), then draw off several small portions and add different spice/sugar mixtures to get the flavor you want, then dose the entire batch.

Good call 1 gallon growlers should do the trick

If you want to keep it sweet, up the crystal and mash with a thick ratio and at a high temp.
