I picked up a pail of blueberry blossom honey, so it's time to make some mead. Anyone have some recomendations as to a good yeast that will work well with this type of honey. I was thinking of doing some dry/sparkling, some sweet/still, some with organic blueberry juice and possibly one with herbs.Any thoughts/tips?

If I were trying to preserve as much of the blossom character as possible, I'd use Lallemand's DV10 or D47, and I'd ferment on the cool side. 71B will also work, but you'll have to take care to get your mead off the lees before yeast autolysis sets in, or you might end up with some nasty off-flavors that are a byproduct of that yeast's breakdown. I wouldn't use EC-1118, as it tends to be such an aggressive fermenter that it can drive off volatile aromatics from the honey, that you might want to keep.
