So I brewed this up yesterday:7 gallon batchOG 1.061IBU 41-49 (depending on the program)10 lbs 2 Row1.5 lbs Munich1 lb Biscuit.5 lb Crystal 20L1 lb Crystal 80LMash at 154-155 for 60 min.Hop Schedule1.0 oz Northern Brewer 8.0%AA 60min1.0 oz Perle 5.6%AA 30min1.0 oz Centenniel 6.0%AA 15min1.5 oz Cascade 5.4%AA 3minFermenting with a fresh pack of S-04Now my biggest concern is whether or not I have enough crystal in this? I was also wondering if anyone had any thoughts on the hop schedule.

You have more than enough crystal for my taste, as well as the high mash including Munich as a base malt. I guess you like sweet beer as I've seen your name enough to know your not a newb. It wouldn't be a beer I would be crazy for but with the right group it could work.

I wonder how many people think when they are drinking a Red Seal, Dale's Pale Ale, Nugget Nectar etc don't realize they are drinking from the brewer's of those perspective an American Amber? It should be a hoppy beer by those guidelines but also a malty beer by others, it is truly not a defined style so brew the beer you want.

If you fermented it with US-05 instead of S-04, I think this beer would be great. Not at all too sweet.
