carrot beer

I've seen beer and wine made from all kinds of things, but I can't seem to find any reference for a carrot beer. I don't think it would be that different than a pumpkin beer and I just may need to make one. I was just peeling some carrots with my wife and realized after the aroma hit me, that carrots would probably taste pretty good hopped. :D

I'm not sure how you'd impart that fresh carrot taste. I don't think you'd want to cook them. Maybe small chunks, soaked in starsan for a bit and thrown in secondary. I'm not sure how much flavor you could get out...

I would think shredding, blanching, then adding the carrot shreds to the mash and sparging with the blanche water would be the way to go. Carrots have a very high sugar content, so you may as well mash.A buddy of mine attempted a Carrot Cake Ale recently, but he said he used too much vanilla and it ruined the balance, a pretty cool idea, though.The second batch I ever made solo was a Beet American Wheat with cooked beets added to the mash. It was pretty good.
