Made 15 gallons of cyser today. I've got ingredients for 30 gals, but I've only got 3 primaries so the rest will have to wait. I've messed around with a lot of variations on Schramm's Falls Bounty Cider. I've decided that the cyser I like best is his recipe as written, but sweetened to taste later on.The cider came from a local mill, pressed 5 minutes before I put it in my car this morning.[attachment=455:cidersmall2.jpg]The honey is from my hives, last year's harvest. I've got a ton of honey to use up. This stuff is crystallized, but not completely solid. It's light colored on top because the foam crystallized too. It's normal honey color underneath 1/4" of that light stuff.[attachment=456:honeysmall2.jpg]Adjuncts are dates, raisins, and brown sugar.[attachment=457:adjunctssmall2.jpg]Assistants are kid #3 and 2 apple joosi. The other two kids figured out what was going on shortly after I put the camera away. I am going to bottle last year's group mead (Fall's Bounty Cyser) any day now. It is very clear and is quite tasty. It was made with a blend of apples pressed by myself, sage honey and 1/2 lb dates.49 weeks old, can't wait to chill a bottle and give it a proper inspection.

I have 27 lbs of honey and a big cider press next weekend. Cyser will be made, but I'm still thinking about this years recipe.

It's normally $6/gal, but they gave me a 10% bulk discount.Last year I refused to pay that much, but this year I broke down. :)
