We were in a hurry to get it done, since we are busy at GABF and Breckenridge Oktoberfest next weekend, then the week after we are making perry and he has grape harvest, then other commitments after that for a month.

Oh I understand. I mainly jealous since you will have 10 gallons of this and I'll only be making 5 since I have to save fermenter space for cider

maybe I should get around to transferring mine...more age may help reduce the percieved tannins or just crash cool and add some gelatin
