I use Weyermann's Caramunich III in a lot of beers. So I'd say that.

Good topic. Hard to answer though... depends on the brew.CaraMunich is my favorite caramel/crystal malt by far.Victory/biscuit is awesome. Love it in bitters, pale ales, and IPAs. Also essential in a nut brown ale IMO.Pale Chocolate (225L) is a great roasted malt. Not as intense as regular Chocolate, but contributes a great roasty character.

I'd have to say that currently my favorite specialty grain (for the moment) is Carastan. Why? I really am digging it's flavor profile, not too roastey, nice caramel sweetness, just Brit enough to make my Canadian 2-row a bit more authentic in a bitter, along with a bit of biscuit.

cool, I'd have to order it in but I am thinking it might be nice to get a couple lbs of different specialty grains that I can't get here... like pale chocolate, chocolate wheat, maybe carastan, some carafa..... etc.mmmm mmmm I gotta reiterate how much I love this special b flavour. wablam, I can definitely get the dark fruitiness alongside the full caramel flavour. yummmmmmmm.

When I worked at the homebrew shop, Special B was definitely my favorite to munch on. Almost like candy.
