What about spices? I like the combination of coriander, cumin, grains of paradise and since it's for your daughter...sweet orange.

Oops, forgot to put those in huh?! Yes...I was thinking corriander, cinnamon, orange zest. Never used cumin or grains of paradise...what characteristics do they add?

Cumin is something you would normally associate with chili. It's hard to explain what it adds to a Wit, but when I use it, the complexity is amazing. GOP's add a slight peppery flavor. Curaco bitter orange is traditional but I prefer sweet orange. Coriander adds an orangy flavor too.

What about zesting this with a lemon and adding coriander?

Sounds great to me!
