What hop?

I'm planning a dry stout based of earthtone's post. However I have 3 english hops on hand and cant decide which to go with. I have Target, Northdown and Golding. I know earthtone runs with the goldings but I was looking for some thoughts from the blue board.

I would probably go with the Goldings just because that's what I usually use in my stouts. I haven't looked at the recipe, but honestly, I don't think any of those hops would be a bad choice (not familiar with Northdown, though). Most of the stout recipes I've done only call for a bittering addition, and as long as you shoot for the same IBU, it doesn't make a big difference in my experience.

I agree with Tankard. If the Goldings is EK Goldings, I would save it for a bitter or something where the hops character is more prominent. If it's US Goldings, then I'd use that since it's not that good for aroma. Can't go wrong with any of them though.

Yeah, it's only a bittering addition. I'd use the one you are least likely to use in another beer. Any of them will be appropriate. I used Willamette in mine.

I would use up the Target, but I'm not a fan of that hop.

Well they are US Goldings... So I have ruled out the northdowns.. I'm leaning to the goldings... I have bought a pound of each of the golding and target about 4 months ago and I think I used the targets in almost every beer I have made except a wit and a cream ale. Not that I don't like the targets because they are nice.. but, sometimes you need to take a break from something.

On the other hand I could just use an ounce of each of the targets and goldings. A six gallon batch would be at around 48 IBU. That wouldn't be out of line would it?? There is alot of roastiness from a full pound of RB so that would be a nice amount of bitterness from the hops right? I could be way off base because this would be my first stout so I could use some more input here.

I think the consensus is that since this is a stout, it doesn't really matter. Use the ones that you would be least likely to use in something else. For me that would be the US Goldings.

I would agree.Not knowing the OG, off the top of my head I'd say 48 IBU was a bit high for a dry stout. IMO, the roast provides the majority of the balance in a dry stout so that lots of hops are unnecessary.

I ended up going with 10 AAU of Goldings with an OG of 1.044.67% Pale Malt22% Flaked Barley11% RB
