What do you guys do? I have a bunch of hops in the freezer from when St. Pat's was still selling beer supplies. They still have a hop aroma. Right now I have them sitting in a bag in the garage, but would like to use them sooner rather than later. Any ideas to make them more immediately usable?

I seem to recall a recommendation of baking in an oven from one of Papazian's books, or leaving on a sunny dashboard etc.., I think it was 200 degrees for a haalf hour then leave them in the open air for a couple days

When I did my kriek last year I didn't bother aging - just used a small amount of a mild hop. I can't taste/smell any hops in my kriek or any other kriek I've ever had so I honestly question whether it's worth bothering to age them. Maybe the monks used old hops for lambics since they wouldn't contribute much of any flavor or aroma to the beer anyways. YMMV.

Decided to check out Freshops today and saw a listing for Lambic Hops from 2007. I remembered this thread and thought I would post it up. Hops

That's pretty weak they are trying to sell those for $1/oz. you can buy fresh willys for about half that. then you could just age them yourself.

While I completely understand what you mean I also think that if you wanted to make a Lambic even in the next three months that could be the way to go sinc they are aged already based on them being 2007. I just thought it was interesting since I honestly have no intentions to make a Lambic at this point too.

I agree if you need them you need them but taking old hops and labeling them as "lambic" so you don't have to otherwise toss them seems like trickery to me.ETA: and you know the only reason it's willy is b/c everyone has a ton of willy since I believe bud stopped using it.
