What no thread this week? Figures it's a weekend I actually am brewing.Today is going to be a good one too. 60 gallons of 1.117 Barley wine is the plan for today. Thankfully I'm not doing it alone :D . There will be 7 brewers with their rigs contributing to the making. Oh and there will be 1 mead maker standing around pointing out that what we are making doesn't look anything like PBR or icehouse.Anybody else brewing this fine weekend?

I'm brewing up a Belgian somethingorother tomorrow. Not sure exactly what to call it, but roughly 1/2 pils, 1/2 wheat to around 1.070, maybe a dash of special B for color, WY3787. It'll be around 92F tomorrow, a relatively cool day for what we've had lately, but I'm still starting early.

I made a starter of the yeast I harvest from some Rare Vos bottles. That SOB went crazy. It's the first time the foam has actually escaped my 5L flask.

Added some insulation to my fermentation chamber today that seems to have made a big difference. Tomorrow, 10 gallons - all Pils, Magnum bittering, Marynka flavor/aroma, Spalt at flameout. Wyeast 2112 slurry fermenting in the upper 50's df.

I did 10 gallons of a Belgian Dubbel on Friday. I am looking forward to finishing up my Belgian series, and see how well I did - I haven't really done any Belgians beers besides Wits, so I want to see how they turn out.

I've got pics I'll try and post today. I'm going mountain biking this morning though. My 6 cubic foot wheel barrow is overfilled with spent grain, 2 full 5 gallon buckets, and two 20 gallon totes also full of spent grain.Right now both barrels are chugging along.

brewed my first try on a Scottish 80/-. Simple recipe used 95% uk pale malt (wish I had Marris Otter though), 4% victory 4% roasted barley. 18.9 IBU of Target at 90 min boil and of course a wyeast scottish ale yeast cake. I started off with a single decoction and boiled the decoction pull for about 20 mins. Added back to the mash and boiled the first 2 gallons for about 30 mins and then proceeded with a 90 min boil and I still had to dilute with about 1/2 gallon. I love when my brewhouse eff is better than expected, probably due to the decoction. will ferment at 60 degrees for a nice clean fermentation. Long day though 7 1/2 hours in 93 degree N carolina summer heat! :stabby:

I brewed an american wheat with 100% citra hops, a belgian pale ale, and a 100% brett brux beer. Hopefully two of them will be good :stabby:

The steam starter chipotle is in the kegs, but not picking up as much heat as I wanted. So we brewed Sweet Wheat White ChocolateWhat a horrid day. Completely sober, IronKite and I flubbed our way through the brew. Not to mention 95 degree swamp weather. :(I did remember to defrost the wound fiber and carbon block filters the night before. That's about the only thing that went right.I double milled the Pilsner malt; so I should be hitting 85% efficiency. But left the calcs at 75% when formulating it in promash.Just bumped up the Maltose Falcon's recipe to 13.5 gal. Had to set the mill to it's finest crush to deal with the whole unmalted wheat. Even then I ran through twice; still chunky. :(At least the mill motor didn't overheat. When we underlet the strike water I commented who added the milk to the cereal! :stabby:No kidding, it looked like what I had for breakfast, rolled oats and milk.Guessed for 22°F delta for strike. Turns out we only needed 10°F.So we hit the protein rest 12 degrees high. Guess the thermal mass of the wheat isn't that high. Then I'm looking over the recipe and say "hey over 50% wheat and rolled oats. Not good, need rice hulls."Except I'm out. :angry:We finish the protein rest and raise to scarification rest temp of 149°F. That we got right.I split for the LHBS 45 minutes away. I've two choices, equally far apart. One I have to go down the beltway, which due to construction is now a three lane parking lot to be sure. The other is a "nice" ride through the countryside, and I have a lead foot. :devil:Two lane twisty road and every freakin' bicyclist, rubber necker, supper safe soccer mom and sight seeing tourist is out for a cruise. :banghead:Finally clear road and a container truck pulls out in front of me going up a steep hill. 20 MPH! AAAAAARGH! :banghead: I get to the shop and a lady is in line and wants a course in meadmaking, which the proprietor gives her.I understand, we can't dis the new customers. But this is a brewmergency dang it!I'm glad the trip back went easier, I was ready to run over people!Threw the pound of hulls into the mash, stirred them in and runoff was a snap.Yes, it was FULLY CONVERTED !!!!!!We goofed on the sparge volume, having 2 gal too much. The gravity was light, and we were leaving sugar in the tun. So a second kettle was placed on the HLT burner and maple syrup time ensued. Total wort was about 16 gal boiled down to 13.The hop and spice dosing went OK.Chilled to 47°F with 32 pounds of ice.4+ gallons in each of 3 cornies via the Alludium Q-36 wort modulator, plus a shot into the yeast flask which went on the stirplate.Lager fridge running at 53°F for the 2035 yeast. Two of the three bubbling in the airlock. Looks good, except OG was supposed to be 1.058. We hit 1.048 with the syrup boil down.So I'm still trying to figure out why we're 12 points or more low. I'm guessing the unmalted wheat is NOT 40 P4G!suggestions guys????besides find a new hobby.
