Yeah, I know check the gravity, check again in 2 days. Well, that didn't really happen and I'm leaving tonight and will be gone until Friday around noon. I need the beer to be ready Saturday. I brewed almost 2.5 weeks ago. So, I can keg today, put it on CO2 and let it get right all week OR I can let it mature a little longer and keg it Friday and shake carb it on Saturday. I'm leaning towards kegging today.

At least give us the OG and yeast strain, that could be a big factor.

Irish and American yeasts, smack packs.LOL, the OG was a clusterf**k too. The first night I did an oatmeal stout and got a nice buzz while doing it. Completely forgot to take the OG. The second batch I did the next night. I remembered to take the OG...and it was horribly low. Since I don't keep LME on hand, I had to buy some the next day and add it. So there again, I don't have the OG. Supposedly the second batch (MLPA) should be around 1.06 after the LME addition assuming the LHBS guy was right and that I got it all mixed in well.

Taste. You will know alot thru taste. If it tastes anywhere near cloying, then it needs a little more time. But im sure you can come close to an idea what the OG was just from the ingredients and projected ending volume. Also if you notice the krausen start to fall then this is another indicator. But knowing those two strains, krausen may not fall completely. Just a little word, if you keg today and still need some points, especially if there is any yeast still suspended. Its likely you will still gain some points while in the keg. This can lead to over carbonation over a period of a week or so. But if the beer is needed by Sat. keg it, put some juice on it, and dont move it. Your gonna get a ton of yeast falling out for the next week.

Keg it if it tastes anywhere near what you expected it to taste like. The worst that can happen is the beer continues fermenting and gets way overcarbed.

The blow off tube hasn't been seeing too much activity for a while, so I believe it's pretty much done. We'll see, and I will do the taste test.

A blow off tube really wont show alot during the last few points where an airlock will. One thing I like about the single piece airlocks is they show atmospheric pressures.

I don't doubt you for a second, but I just tasted the MLPA and it has plenty of alcohol in it. Time to stop. Will report back on the oatmeal stout. I'm worried about the ABV on that one because if the efficiency was so low on the MLPA, I have no reason to believe it's much different on the stout. Hopefully I'm wrong.

Well, the Quiet Storm Oatmeal Stout tastes fantastic. I'm not a good judge of ABV, but it tastes ok, and that is what matters. Besides, if I'm only after the buzz, the MLPA ought to do me well there.

I'd keg it now and start carbing. The PA will cloud up with sediment if you fast carb and shake. Won't matter on the Stout.I had some Quiet Storm Stout in St. Louis last weekend - made by the Master. Great stuff - https://www.stlbrewfest.com/

I've made QSS and some slight variations quite a few times. Surprisingly it's great quite young. IIRC Jim has had the same experience.
