My Sticke is Stuck

I brewed this on 5/10. OG 1.067 and it pretty much shut down - was fermenting at 60df. I decided to take a gravity 1.034. Great, did the swirl and warm up - it's going but slowly. How warm can you really go with Wyeast 1007 without ruining the beer? They recommend 55-68° F and I'm at 67..........

I like to try and keep to the fermentation range of whatever yeasts I am using. I would hold your stuck Sticke at 67 for a few days and see how it changes. Then I would consider alternatives from there too. I am chilling a Kolsch and going to repitch 1007 and ferm at 64 as well. Amazed that yeast stopped on you too.

1007 is turning into my house ale yeast, never had it stick on me yet but I've heard the stories. I'd think you could push it to almost 70 but after that you will get some unwanted fruitiness, fine for a kolsch, not so much for a sticke. You're probably looking at another slow week in the fermenter.

Yeah, I've made quite a few of them. I pitched a huge amount of slurry and stir aerated with a drill.

It's chugging away again, slowly but relatively active - about what I would usually expect this far in for attenuation. Weird, haven't seem a ferment with 1007 act this way before.

If it stays tuck, I would transfer it to another primary and pitch some fresh 1007. Preferably with a different expiration date.You could use 1056 or US05. Obviusly they are not Alt yeast, but it might be what you do to finish the beer.zymot

I think I created a monster. Finished at 1.012 and goes down like a session beer...........

I wish, Friday will be a long day so it needs to be an early night. In the office before 6:30, quit at noon and a round trip to Wichita and back in the afternoon. Gonna miss the KCBM mtg again Fri too. They probably think I quit brewing...........The Sticke really needs a bit more lagering anyway, and there's about 9 gallons left so it's going off tap for a couple more weeks. Someone named Stenger talked me into tapping it, a repeating theme................
