Just looking for any suggestions or at least some affirmation that I'm on the right track. Plan on brewing this on Saturday.

Thanks Dave and zym... I went to bed last night and started wondering if I should just get rid of the wheat... only reason I had it there was well I like wheat and maybe for some help with head retention...

I'm with the other dude, looks damn tasty! You can drop the wheat if you would like. The only change I would make is to bump up the mash temp at least 2 ºF... Plus the extra dextrins will aid in mouthfeel and head retension! Good luck and let us know how it comes out.I'm brewing up my oktoberfest in august when I get back in town from my internships. Should be ready by mid september/early october! My recipe is simple and available in my sig.

Thanks Rick. I'll shoot for 152 ºF. Maybe drop the wheat altogether or at least drop it a bit.

So no crystal at all? Would that make it more to style I'm assuming?

There's a difference between the caramelly sweetness you get with crystal and the malty sweetness you get with mashing warmer. The latter is what festbiers are all about.

I was kind of thinking more along the lines of the export Oktoberfest beers rather than Festbiers one might consume in Germany... still the case then with no caramelly sweetness? And it sounds like I'll shoot for 152–154 ºF, if I get close I'll be happy!

I took Mnt's suggestion last year when I was coming up with my ofest... and I don't regret it. I don't have any crystal malts in my version, just pils, munich, and vienna with a touch of carafa special II. Came out as a nice malty, bready beer with a touch of toastiness. But of coarse, homebrewing is all about brewing what you want.

OK, this is what happens when I think too much... so if I drop the wheat and switch around the amounts of Munich and Vienna, does it become a Munich Dunkel?

Shag, Reading the posts for your recipe I too left out Crystal malt in my Ofest as well. In addition I have never brewed a Munich Dunkel but looking it up on BJCP site it says grist consists of mostly Munich and that followed by Pilsner malt so since you are using Vienna I would say no it does not. Thats just my insight and $0.02.

I just went back and looked at my o'fest recipe (which was at least partially influenced by mtn) and this would put it closer to what I brewed. Although I skipped the vienna and went heavy on the munich. I also used some carafoam.

Yeah I think I will skip the wheat, which will be the first beer in a long long time that I've brewed without wheat.Out of curiosity, where in southern NH are you? I lived in Nashua for about a year back in the mid-80s; then in West Leb for about six years.
