Thanks Rick. I'll shoot for 152 ºF. Maybe drop the wheat altogether or at least drop it a bit.I'm with the other dude, looks damn tasty! You can drop the wheat if you would like. The only change I would make is to bump up the mash temp at least 2 ºF... Plus the extra dextrins will aid in mouthfeel and head retension! Good luck and let us know how it comes out.

So no crystal at all? Would that make it more to style I'm assuming?I'd drop the wheat and the crystal and raise the mash up to 153. Otherwise, looks good.

There's a difference between the caramelly sweetness you get with crystal and the malty sweetness you get with mashing warmer. The latter is what festbiers are all about.So no crystal at all? Would that make it more to style I'm assuming?

I just went back and looked at my o'fest recipe (which was at least partially influenced by mtn) and this would put it closer to what I brewed. Although I skipped the vienna and went heavy on the munich. I also used some carafoam.I'd drop the wheat and the crystal and raise the mash up to 153. Otherwise, looks good.

Yeah I think I will skip the wheat, which will be the first beer in a long long time that I've brewed without wheat.Out of curiosity, where in southern NH are you? I lived in Nashua for about a year back in the mid-80s; then in West Leb for about six years.I just went back and looked at my o'fest recipe (which was at least partially influenced by mtn) and this would put it closer to what I brewed. Although I skipped the vienna and went heavy on the munich. I also used some carafoam.
