OG 1.091, after 29 days at ~65-68 degrees it's at 1.021. I stirred up the yeast cake to try to get more activity, but I'm not sure how much good that'll do. It tastes sweet with quite a bit of coriander and huge honey nose (I used wildflower). Thankfully the ginger isnt overpowering even though I used ground ginger. I'm hoping it'll dry out more. The house is getting warmer these days, so that might help. Any other ideas? I used a 3787 slurry from a previous batch.

That's about 77% apparent - not bad in general terms. My M.O. if I'm trying to dry out a big beer is to give it three or five days and then start warming it after maybe the first third or half of anticipated drop. Most of the ester worries will be out of the way at that point, and you can get the yeast really excited. At this point, I would try and warm it to the mid- or high- 70's and swirl a couple of times a day. You should know in five or seven days if you're going to see any further attenuation. If not, you can either age it for 12 mo and let it be what it is, (you're already at close to 9.5% abv, and there are some mighty fine aged beers that started life way too sweet) or drop in the champagne yeast. Beware of using the champagne and then bottling before it's done. If you're kegging (and not bottling afterward) this is a non-issue and you should be fine chilling and kegging whenever you get where you want to be.

A pack of S-05 would be my course of action.

Would it even survive in that amount of alcohol?

At what point do you start worrying that it's been in primary too long? I think the longest primary I've done before was something like 2 weeks. This is already double that.

Yeah, but use several packs.

I wouldn't sweat the 29 days....I had my first batch of Liquid Stupid in the primary a little longer than that....but try to warm it up to maybe 72 degrees or so and swirl the beer to resuspend the yeast...they might be out of octane because you already had a pretty good drop in points....but try that and observe and then if you want...this is what i did...i added some dry T-58 yeast, about half a package, about 2-3 days before I bottled to make sure there was enough yeast to react with the bottling sugars...you will need to make sure that the yeast is active before bottling...unless you force carbonate...then never mind!....Jeff (Alpha Male) who created this wonderful beer, likes to get it down to around 1.020 or a little below...I like it a little sweet so I had mine get to 1.022 and that was good enough for me....it's a phenomenal beer!

I've never brewed LS, but I have drank it (thanks sdeweese!). As mentioned above, 77% apparent attenuation is pretty damn good. I typically mash low (148F) and will get 80% AA with US-05, which is known for fermenting it down low, so 77% with 3787 might be it. I'd say rack it to a secondary and let it sit a couple more weeks. There is still plenty of yeast in suspension. It might drop another point or two (or not). RDWHAHB, etc...

Racked tonight. 1.016 after 40 days in primary. I stirred the past couple weeks. I'm pleased with that. ~10% ABV. It's got a kick. I'm sure it will age nicely!

congrats, that's a hell of an attenuation. If you haven't experienced it before, all I can say is be careful it's a sneaky ass kicker of a beer.
