I'd like to be an identifiably American IPA, with a nice late-hop presence. Varieties available: cascade, centennial, amarillo, magnum, willamette (1 oz only, I think), northern brewer, columbus (1 oz only, last year's crop). Inspire me?

Do you want it to be citrusy? Amarillo & Cascade (at least late). Do you want it to be cleaner? Magnum, Columbus, Centennial. A little spicy/earthy? Northern Brewer. I think you first need to decide what direction the hops will take the beer and then get a hop schedule from there. Persoanlly, I don't like that in-your-face grapefruit thing. I don't mind an ultra-hoppy IPA or IIPA, but I still like the hops cleaner, not citrus-fruit. Good luck.

I am actually a huge fan of cascade/centennial.....there's a grapefruity zesty thing that goes on between those two hops that is just badass. Haha which is what ken just stated he doesn't like! Funny stuff, truly, how taste differs.I'd do a cascade FWH then bitter with cents, then do like a 20, 5 and flameout of maybe a mix of the two and then dry hop again with both.

I would suggest Magnum for bittering - pretty clean IMO and judicious use of AAUs. Then cascade, centennial, and amarillo for flavor and aroma - your pick. That's not written in stone, but should work well.

Sounds like a great opportunity to use up your Columbus. Throw that in for your bittering charge or you may end up throwing it out. (THAT is not a judicious use of IBU's.) That ounce at 25m should give you enough for 40 IBU. Then at 20, 15, 10, 5, 0 add a half-oz of a blend of Cascade, Centennial, Willamette 2:2:1. Dryhop with .5oz Amarillo.That'll give you about 1:1 BU:GU and a monster hop aroma and flavor. There will be citrus, but somewhat mellowed by the earthy, spicy Willamette. Amarillo's insane grapefruit zest is toned down when it isn't boiled.
