Just kegged up the second batch from the Lawrence Brewers Guilds 23 year old Pappy Van Winkle Whiskey Barrel. This one was a Impy Red using all Nobles. In barrel 6mths at 50*. Turned out wonderful. The first was a Century Impy Stout which i took to the Homebrew tasting session at GABF last year, so some have sampled it.Our barrel is in tip top shape. No signs of any type of bacteria. The whiskey aromas from the barrel are now low-low. The wonderful smells of oak now dominate. This barrel is not going to be inoculated just yet. Maybe next round, who knows. Anybody got a suggestion for the next style to grace itself upon this wonderful barrel that just keeps on giving? American IIpA, or Black IpA has been talked about. Any ideas from the peanut factory?Thanks....

Think outside the box, doppelsticke alt or ice weizenbock. Imperial Schwarzbier?

Kind of new to the board. You refer to the barrel you use as common knowledge. I did some searching for the Lawrence Brewers Guild barrels only found a homebrew club by the same name and a brewery in Michigan. Is it a source for barrels?

It's their HB club's project. As far as the next brew, what about a dark mild or brown?

Imperial Schwarzbier?

I think that's called a Baltic Porter...which sounds as good an Old Ale...or Wee Heavy.

Actually, a Baltic was tossed around earlier as well. Some feel having a Century Impy Stout and Red already, would prefer having something less malty and more hops. That's why the two IpA's were discussed. We've done a IIpA before years ago in a barrel, and i can say it still has lasting memory. All very good suggestions and something to add to the thought process. And yes, Lawrence Brewers Guild is my club, not the name of a cooperage that im aware of.

Baltic is dark and dried fruit leaning to a sweet finish and full body. I mean an Imperial Schwarzbier. Clean medium body with moderate roast and a dry finish, but with a higher OG.
