All Munich & Vienna as base malts...

So over here, I put my recipe for a Mexican Amber Lager and Chriscose very obvervantly noticed that I used all Munich and Vienna as base malts but I had a pound of corn in there too. Will there be any diastatic power from the Munich and/or Vienna to convert a pound of flaked corn? I already made this beer and it's fermenting (smells nice too)... otherwise I would've retooled the recipe to include some percentage of pils or 2-row. What will happen here? What will the corn contribute if anything and could there be a problem in the finished beer? Thanks gang.

1 lb flaked corn against 9 lbs vienna/munich. I would not be afraid. Vienna and munich can self convert and I would expect they would have enough extra to take care of the flaked corn.If you are going to have some anxiety, do an iodine starch test and plan that you might have to mash a half hour longer. But I would be suprised if you notice anything different.zymot

+1 Zymot. Ken, I would not worry much about it. I agree that Munich and Vienna are 100% self converting. When I made my Munich Dunkel around 3 weeks ago I used 10lbs of Munich and I got a great conversion and SG of around 1.052 for 10lbs of grain. I don't think that the Munich or the Vienna would have any problems with an adjunct such as corn. I am sure this one will turn out great for you. I personnaly will not be concerned about using Munich or Vienna as a base myself as it converts as good as 2 Row it seems to me. I also brewed a Vienna back in Dec 09 and it converted well too.

Thanks guys. I did hear from another brewer who made a beer with 80% Vienna and 20% corn grits and he said that everything went fine. I feel better about it now! Cheers.
