Need some direction

Ok so I really like malty beers, so the idea of using Munich as my base malt seems like an interesting idea. However I do not have the ability to lager so it needs to be an ale. The only 2 ideas I could find on the board is a dampfbier(which was like 65/35 munich/pils) and a SMaSH w/munich and summit hops. I don't know where to go with this one so I'm putting this up to the board for advice.Cheers!

I know it was talked about before on here but why don't you make a Pale ale with Munich as your base and maybe like a half lb of a light Crystal malt 10L-40L and use your Summit hops as you like. I would say hop to around 30-40 IBU's so that you can get a balance between the munich malt and the hops. Use a clean american yeast like 1056 and I think you will get a beer that you will enjoy as well.

How about an altbier? While most recipes have pils as the base malt, many use equal proportions and I have even seen some use mostly munich with just some pils. The last configuration probably isn't authentic, but if you want a malty munich ale that might be the ticket. I'm actually considering something very similar and hoping I can find or adapt an alt recipe so that most of the grain bill is munich.

I just made a porter that was almost all munich malt with 2 lbs of chocolate malt thrown in. Really simple, gonna move it onto the keg next weekend and I can get back to you on how it tastes!

I use Munich in a lot of ales, like my red ale and my mild: Red Ale: 6.5 lbs Maris Otter 2.5 lbs German Munich 0.5 lbs wheat malt 0.5 lbs crystal 60 0.5 lbs Cara-pils 0.1 lbs roasted barley hops: 0.6 oz Magnum for bittering, 0.5 oz cascade for flavor, 1 oz Fuggles for aroma Mild: 3.0 lbs Maris Otter 3.0 lbs German Munich 0.7 lbs Biscuit 0.4 lbs Crystal 40 0.2 lbs crystal 60 0.2 lbs crystal 120 0.2 lbs chocolate malt hops: 0.7 oz Challenger for bittering, 0.1 oz Challenger for flavor, 0.7 oz Fuggles for aroma

yumm... porter.. I think I like this idea... and I just ran out of porter. hmm.. Please let us know how that turns out. The only recipes I have seen that call for 2lbs of chocolate are RIS so I'm interested on how this turns out.
