I have been throwing around the idea of making a bock or doppelbock before the weather warms up again. Does anyone have any good recipes? I prefer something not 'over the top' - something along the lines of a Spaten Optimator. I'm not to the point of formulating my own recipes yet, so wanted to see if anyone had any winners in this category.Also - is a decoction necessary to brew a good bock? I've read mixed reviews on this. I've never done anything other than a single infusion and not sure if I would need to mash a bock grain bill any differently.
