Hello,I was messing around with my kegging system and I accidentally unscrewed, all the way, the PSI adjuster screw. Everything was attached and there was pressure running to the keg. Nothing happened, I just wanted to make sure that's OK and didn't mess anything up. I immediately screwed it back in.

You will be fine. The regulators are designed so that if the adjustment screw is backed out all the way, pressure should be cut off exiting from the regulator, this was a safety design, and why you tighten the screw in to increase the pressure, and back it out to decrease the pressure. Nothing to worry about at all.
