Wyeast 2782 Staro-Prague Lager Yeast...

Gang: I made three beers with this limited-availability lager yeast... a Prague Pilsner, a Vienna and something that should get me close to something like Sam Adams Boston Lager (Pils, some Crystal 80L, Tettnanger & Hallertau Mittelfrüh, etc). I had the Prague Pilsner and the Vienna on tap for a homebrewers gathering over the weekend and I racked the Sam Adams batch from primary to secondary today. This is a beautiful lager yeast. It has a bright, crisp profile and it screams BEERY BEER to me. Yeast like this remind me why I like making lagers. Even though I enjoy making and drinking good ales, a yeast like this produces a beer profile that you just don't get from an ale yeast. It's supposed to be very versatile and can be used for various styles. I left this last batch in primary for 19 days which is a little longer than I would normally go, but by the time I racked today, the beer was ultra-clear. The yeast is available OCT-NOV-DEC so it's still around for a little while. You won't regret using it. Cheers.

Thanks Ken, what temps were you running this yeast at?

I pitched it into wort that was about 45° and it stayed in the 50-52° range for the whole primary and then may have gone high 50s to 60° at the end for a d-rest. I think the ideal range is 50-58° which is a little higher than most lager strains. Cheers.

Currently doing a D rest with this yeast on a Bo Pils brewed the weekend of Thanksgiving. I have tasted a few gravity samples and it is a great flavor and very clear as Ken says. I am impressed and am planning to brew with this yeast in the coming weeks. Given the versatility I am planning to try a Schwarzbier, then a Maibock and who knows maybe something else but yes this yeast is impressive. I was at my LHBS on Saturday and chatting with the owner and he said that he is having a tough time keeping this strain and the Hella Bock in stock especially for being lager strains.

Yup made a big bock with this particular ceiling painting strain and it's VERY promising from the smell and samples I've pulled. It's carbing/lagering in the chest freezer now and I'm hoping to tap it a couple days before Christmas!

The fermentation of my Bo Pils with the Staro yeast is done now. After reading this post again and recalling a previous post by Ken and Strangerbrewer I am really surprised about the comment of this yeast being so "violent or volcanic" in nature. The starter I made on the stir plate was pretty tame and the fermentation of the Bo Pils at 50 degrees was calm as can be as I have seen with many lagers. I will brew with this yeast in a couple more weeks so we will see but I am just surprised that it was violent seeing how calm it went for me. Regardless I can't wait to have this beer on tap.

I just did a gravity check on my Vienna Lager (1.050 Vienna, Pilsner, Caramunich, Hallertau) that I fermented with a repitch of the 2782 Staro Yeast. I brewed this beer last Friday 12/18/09 and it should be at its FG 1.016. I am pretty surprised/impressed as this has only been a week and it was fermented at a constant 50 degrees. I saw Slainte comment today about Lagers with good pitch rates and oxygenation can ferment just as fast as ales. I have noticed that repitches start quicker and ferment faster which is all good. This yeast is great. The gravity sample is malty, crisp and very tasty. I am going to need to repitch this yeast again after my planned new years day brew and see what other great beers this yeast can produce. This Vienna Lager should be good to drink in Feb 2010 after some Lagering. Get it while you can. Prost.

Hey Ken I just did the same thing last weekend (trying to "impersonate") Sam Adams Boston Lager And its still bubbling away at around 50 or so degrees. It was however my second attempt at a decoction because if I am correct Boston Lager utilizes a decoction style mash. Did you use decoct your batch? I intended on only doing a single mash but I missed temps and ended up having to use a second infusion. I did however have a sample last night and although its still not done you can taste the flavor of the decoction mash! I am now a true believer in this old style of mashing now. Excellent flavor already! :sarcasm:edit: sorry did not mean to thread jack!

I'm bumping this thread after bottling some of this Vienna this morning for the beer pass. This 2782 lager yeast is teh awesome. The Prague Pilsner I made with it was okay, but this Vienna is stellar. I have another batch of a Sam Adams BL kind-of-thing that I hope is equally good. I just called over to my LHBS and asked if they had any more of it and he told me... I was going to make a pilsner with the last Activator in the fridge... but you can have it! I'm going over there mañana to pick it up and make some more of this Vienna with it. If anyone has a beer in the pipeline with this yeast... I think you're in for a treat. Cheers.

Really glad to hear this....I'm doing a dunkel with it next weekend. The Wyeast web site refers to some fruitiness in it, so I'm glad to hear no one has experienced that.

Ken. I am on my third pitch of the Staro yeast. Last weekend I brewed a Munich Helles and pitched the 2782 into it. I have already brewed a Bo Pils and a Vienna myself too. I have not had any of the beers yet, the Pils and Vienna are lagering till Feb. I am impressed with this yeast it has performed well and I can't wait to get one of these beers carbed, cold and on tap. Nice score getting another pack my LHBS was only ordering 5 packs of this a week and I got one of the last weeks it was around. I doubt they have any left as well. Staro is fermenting nicely right next to a Dunkel I brewed and pitched the Hella Bock yeast into too.

No carbed beers here yet but gravity samples tasted so far has given me no detection of fruitiness either. Great yeast for sure.

This is one reason I hate the temporary strains... you find that you like them but you can't always get them. I realize there are plenty of strains out there, but two strains I have really gone wacky over lately are WLP940 Mexican lager (Platinum) and this 2782 (VSS) so you gotta get 'em when you can. Luckily, I also picked up three vials of the 940 last year (MAR-APR) and I have a fresh blob of it working on my Hacienda Lager as I type! Cheers.Ps. No fruitiness detected in this Vienna I'm drinking right now. It fermented cool (48-50°) and had a d-rest and a good amount of lager time. Cheers.

Good to hear Ken, especially since I'm lagaring your Prague Pils in the garage right now. Also, After I secondaried it I stashed some yeast in the fridge for later. I'm on the second generation of it with a baltic porter (basically the porter I gave you but with this yeast) and now I'm debating what to put on it next!Great suggestion with this yeast Ken!

I called my LHBS to find out if they had any left even though this yeast was only available OCT-DEC. Yep, 1 pack left and I picked it up today! Whoo hoo.
