I was at lunch on Saturday and I ordered a 4-cheese grilled cheese with bacon jam and these pickled cucumbers and onions as a side.  Seems (tastes) like something my mom or grandma would make.  Both of these are close but in the second vid the guy adds lemon juice and dill.  I just made a batch .. cucs, onion, garlic, chopped fresh dill ,vinegar, water, salt, sugar, pepper.  They're chilling in the fridge.  The guy in the second video could have done the trick in half the time so those with ADHD, move along.  :lol:

I’m not sure I’ll use anything other than British cukes again, for recipes like this.

Those long skinny cukes that come in shrink wrapped plastic? Try one, you’ll never go back. No seeds, all flesh.

Minus the dill and lemon mom kept cucumbers and onions on the table all summer long.

I know what they are but I have never tried them.  Not sure that I mind the seeds in regular cukes but if the flavor was MUCH better I might try them.

My mom did something like this but there was sour cream in the recipe too and they were very good.  It was "the taste of summer".  Pretty sure my one sister has the recipe.  Also, I should have used red onion in this.  The presentation would be better.  Next time.

Thinner skin, too (hence the plastic). Those are the only cucumbers we buy.
