I made this tonight.  Chef John's Jollof Rice.

A couple things:  My store was (amazingly!) out of red sweet peppers today.  I also could not find a Red Fresno Pepper.  I'm not a fan of Habanero so I got Serrano peppers and Banana peppers and I used orange sweet pepper.  There was good spice so I'm okay with that.  Lastly, I believe that I'm just not into curry.  I cut the recipe in half and so the curry amount was pretty small but if was up to me I would cut it out completely .. just not my gig.  I grilled up some shrimp to go with it.  It's common for me to see a recipe and tweak it for my own tastes and I think I would do that here next time.  The recipe had A LOT of ingredients on it.

I made this again today.  I left out the curry and instead of the peppers from the recipe (which I couldn't find anyway), I used chipotles and some adobo sauce.  I probably very effectively turned it into a spanish/Mexican rice but it was really good and pretty spicy too.  It's better than making rice with plain water and a seasoning packet.  I also used Jasmine rice this time instead of Basmati.
