Gluten Free Flour Blend

My wife isn't diagnosed celiac, but she is definitely reactive to wheat.  She had a full food allergy panel, and it definitely had a IgG response.  My first wife was celiac...so, lol, not sure what it is.  

 

I was researching GF flour blends and trying several different ones.  I found this one on reddit of all places, and it actually is really fucking good.  Makes great banana breads, muffins, I just made soft pretzels.  

 

125g Brown rice flour

100g Sweet rice flour

96g Potato starch

40g White rice flour

30g Tapioca flour

4g Xanthan gum

My wife has recently decided she's off gluten and it actually has made a difference for her so I guess there's something to it. I will probably have to try this at some point.

So far I’ve made banana bread and my wife made pumpkin muffins with this blend. It’s pretty solid. The above makes about 2 cups of flour.

Aspen's wife has a wheat allergy.  There's something in the wheat that produces an allergic reaction.  This reaction can be different for different people.  My eldest son breaks out in hives and rashes, for example.

I meant clarify, my "I'm not sure what it is" is more....why do I find women with gluten issues??.  It affects my bread eating!  :P

 

Yeah, I actually knew that.  My first wife had celiacs and hers manifested in being severely iron deficient, and bloodwork showing as "malnourished" because it sanded off the villi in her small intestines.  To the point that when the found it (this was like 20 years ago, and no one really knew was celiac was) gave her an emergency blood transfusion.  Her iron was like a 7 and minimum of the normal range was like 50 or 60.  

 

My now wife certainly has not necessarily a histamine response, but definitely a IgG response from the panel test to it.

I can’t say I’ve had that one. I’ll certainly trust it’s good.

The more and more reading I do about gut issues, life longevity, and body inflammation. There is one consistent message. Gluten isn’t good for you, with little exception.

I’ll probably never go gluten free totally, but I’ve been weening myself off the ‘extras’. Like I try and not eat the bread dish offered as a pre meal. Or I’ll use GF pasta at home.

To each their own, for sure. But I’m personally trying to limit it where I can. I just made a killer lasagna using palmini noodles. I honestly couldn’t tell the difference from a gluten noodle. It still had meat and dairy and shit, just no wheat. It was likely indiscernible to anyone not knowing.

Honestly, the largest reason I’ve been exploring this body inflammation thing is I want longevity. I have no kids, and I will have some fun life money in the years to come.

I don’t want dimentia or Alzheimer’s. I want to enjoy myself well into my 90’s. So far, the best environmental factors you can control is body inflammation. That’s sort of my focus now. Yoga/stretching, reading 20min daily. In bed at 9pm, hard exercise 4 times a week. And watching my diet. I took a very explicit allergy test for histamine and IgG response and I’m not allergic really to much. Not even wheat, but it’s a consistent issue with the majority of the population. I rarely drink, actually all but quit. I’m sort of a health dork now, I guess.

I have been going down a similar rabbit hole myself recently, but with the gut biome. It's wild how many things are affected by your gut. There are studies with specific strains of probiotic bacteria that can treat anxiety and depression, eczema, migraines, etc.

Oh, no, don’t get me wrong. Most of my reading is around the gut. It’s all where it’s absorbed, passed by, or have a reaction to. It’s where it all starts.

It’s obnoxious the science around the gut that isn’t commonplace. Or even in the accepted nutritional food triangle or daily diet.
