My wife isn't diagnosed celiac, but she is definitely reactive to wheat. She had a full food allergy panel, and it definitely had a IgG response. My first wife was celiac...so, lol, not sure what it is.
I was researching GF flour blends and trying several different ones. I found this one on reddit of all places, and it actually is really fucking good. Makes great banana breads, muffins, I just made soft pretzels.
