... translates to "country eggs"? I randomly ran across a recipe and decided to make this for breakfast this morning. I went rogue by adding some grilled chicken. I diced that up and threw it in a pan with some onion and then set it aside. Then crisped up two corn tortillas and set those aside. Then fried an egg. Then I assembled it in the pan... corn tortilla, refried beans, the chicken and onion and then pepper jack cheese. Then another tortilla, the egg, more cheese and then I let it warm up in the pan with the cover on until the cheese melted and everything was warm. Then sour cream and salsa. I had some guacamole that I made yesterday and meant to use it but forgot. First time I have made this but won't be the last.
