I made a maibock last spring and really enjoyed it. Goal is to have it on tap May 1st, but might be a little late. Any thoughts/changes?

10 lbs pilsner malt

4 lbs Munich malt

8 oz. crystal 40

35 IBUs magnum at 45 minutes

34/70 yeast

OG 1.070

That looks like a maibock. I sometimes break style a little and throw in a couple of ounces of noble hops towards the end.

I like to use carahell instead of crystal but probably not a big deal.

This was the first maibock I brewed. I did read not to overdo on the Munich malt. Some recipes have a little aromatic or melanoidin malt. I'm wondering if the crystal is worth putting in. I could omit that and dial back to 30 IBUs, perhaps.

I looked and last year I brewed right around this time and let it go for a month. May 1st is probably pushing too much (will be brewing tomorrow). I need to remember to brew this in mid-March in the future.

I typically use mostly pils, some Vienna and even less Munich.

Ended up switching the crystal 40 to 20 for a somewhat paler brew. Mashed in and going.

I think that was a good move.
