Mostly the thread content. I don't think I ever tasted it. What's funny is that now that would probably be a sought after flavor.

It would play well with some of the modern hops for sure

I've got a pretty cold ferment going for my most recent batch, left the house at 61 while on vacation and basement probably a few degrees cooler. I'll see if I can pick up any peach/apricot notes, haven't in the past, though. As far as diacetyl, I think I'm pretty sensitive to that. Actually don't mind it in reasonable amount, either, but haven't gotten it with S-05. I will say that I don't think S-05 is as neutral and clean as people say or think it is. It imparts a noticeable slug of esters. But to me, not peachy. Some of this inevitably is down to individual percepts.

Never been an issue .. or not one I detect.

 

ETA I just wonder if I do not detect it as much as others.  I mean I can get it in microwave popcorn and some commercial but never had it with S-05 that I could find.

 

I'm one of the poor suckers than can detect it just by a beer walking past me. :(
