GRAIN:

 

9lb Pilsen Malt

9lb Vienna Malt

0.5lb Carafoam

 

no sparge so lots of gypsum (9.7g) and lactic (8.3mL) required

 

Ca: 49

Mg: 3

Na: 29

Sulfate: 117

Chloride: 26

Bicarb: -84

 

Hops:

1oz Magnum @ 30

3oz FB#2 @ flameout

5oz FB#2 @ hopstand

 

ferment on diamond lager yeast

 

I might dry hop with the rest of my farmer's blend #2 as well.

 

SRM: 4.3

OG: 1.051

IBU: 30

Wait, what is FB#2?

Looks tasty, though. I might put this on the list for this spring. I think I'll do a PA on Monday, then a maibock but might do something like this first (do lagers in the basement for temps so just make them November through late May).

It's a hop blend from Yakima valley. Not sure what's in it.

Damn, I forgot how slow diamond lager was to get started on the first use. 3 packets into 12 gallons on pretty low og wort. It'll be 48 hours this afternoon and maybe, just maybe I'm starting to see signs of life. Been holding it around 52f.

so held it for a couple of days at about 51-52F.  yesterday morning I put the spunding valve on and built up around 8PSI.  then in the afternoon I cranked it down a little more and unplugged the chest freezer to let it free rise.  currently at 54F.  it's throwing some sulfur smells now which doesn't really concern me as I've experienced this many times and it's not a problem in the finished product.  I'm thinking about not forcing the temp up on this one and letting it just do what it does.  I'll be harvesting this yeast for baltic porter (woot!).

usually means the yeast is nutrient-starved.

I always put in yeast nutrient but I've experienced this before as well.

so this hydro sample tastes a lot more like a bopils than I would have expected.

 

debating if I should def dry hop this or not.

 

it finished at 1.008 which is pretty decent.  tastes good too.

alright, kegging with about 4oz of FB#2 per 5 gallon keg.  should make a nice hoppy easy drinker.  ABV about 4.3%.

Since I made more beer than expected (first biab) I'm trying to finish what's in my primary so I can harvest yeast and clean it. The not dry hopped beer tastes very much like a pilsner. Not sure what's in this hop blend.

Finished the stuff in primary. Nice pilsner type of deal.

Trying the dry hopped version now. Really tasty but def more like neipa light right now.

settling in nicely now.  perfect summer beer in my opinion.
